Slightly spicy, arugula shoots are the young stems of the plant, harvested before its mature leaves develop. Their peppery flavour and tender texture bring a vibrant, refined touch to salads, sandwiches, and warm dishes. Rich in vitamins C and K, antioxidants, and minerals, they’re as nutritious as they are delicious. Enjoy them raw or lightly sautéed to add character to every bite. For optimal freshness, choose sprouts that are bright green, firm, and free from wilting.
