Radicchio is a variety of chicory native to Italy with crisp, bitter leaves and a slight nutty flavour. It is often eaten raw, but can also be cooked, grilled or roasted to soften its bitter taste and add texture to a variety of dishes such as salads, pizzas, sandwiches and pasta dishes. It is also used as a garnish to add colour and flavour.
